Peanut Butter and Jelly Buckwheat Granola Bars
Hello again everyone!
Welcome back to Mindbodyfoodconnection.org. Today, I thought I would post a lovely recipe I created spontaneously in the kitchen a couple weeks ago. After writing my post on Buckwheat and its numerous health benefits, I decided to create a fun twist on a homemade classic! I present to you all Peanut Butter and Jelly Buckwheat granola bars.
Here are the ingredients and cookware supplies you will need. The ingredients are as follows:
Dry ingredients
1.5 cup Buckwheat groats or buckwheat flour
1.5 cup Oats or oat flour (gluten free if needed) Note: I used Gluten free oats for my batch.
1 tsp salt ( I used Pink Himalayan salt
Wet Ingredients
1 cup Natural peanut butter or nut/seed butter of your choosing
1 cup Natural Jelly or preserves of your flavor choice (I used blueberry preserves in mine)
2 Flax eggs- 1 tbsp flax seed and 3 tbsp water per egg or you can use eggs if you like
1/3 cup almond milk or other plant based milk (regular milk if you prefer)
1/2 cup of applesauce in place of oil ( acts as a binder)
Kitchen Supplies are as follows:
scapula
8 X 8 inch pan
parchment paper
1 medium sized bowl
1/3 cup , 1/2 cup, and 1 cup for measuring your ingredients
1 tsp for the salt
Now onto the recipe with pictures of course!
First make sure you have all of your supplies on standby. This helps to make any baking or cooking adventure much easier.
2. Next, after getting your bowl, add 1.5 cups of Buckwheat flour and 1.5 cups of Oat flour into the bowl. Mix together.
3. Next, mix 2 tbsp of flax seed and 6 tbsp of water together in a small bowl. Set aside for about five minutes.
4. Add 1 tbsp of salt to your medium sized bowl. Mix in the salt with the buckwheat and oat flours.
5. Next, add your flax seed eggs you set aside earlier to your bowl. Add two whole eggs if using now. Mix your preferred eggs with your salt and flours.
6. Now we add all the wet ingredients to the medium sized bowl. First up is the applesauce or oil if you are using it.
7. After the applesauce, add your 1/2 cup of milk.
8. Mix all the applesauce and milk together with the dry ingredients until well combined. It should look like the image above.
9. Once all your crust ingredients are combined, take out your 8 X 8 pan. Add parchment paper to it and place half of your crust to the bottom of the pan.
10. Now that we have our crust completed, we can add the 1 cup peanut butter or other nut butter of your choice! For best taste results: spread it on as smooth as possible with the scapula.
11. Now add your favorite preserves of jelly/jam of choice! Again, spread it as smooth as possible for the best taste.
12. Add the other half of your crust ingredients on top of your lovely peanut butter and jelly. One more step to go and we will be ready to devour. Yum!
Finally, Bake the delicious granola in the oven. I have my handy Breville Oven here. Bake at 350 degrees F for 20 to 25 minutes. After that let your bars chill in the freezer for easier cutting and enjoyment for 30 min to 1 hour. You are done!
