Pumpkin Pie Raisin Oatmeal Cookies
Hello again everyone! Welcome back to Mindbodyfoodconnection.org. This is a little late due to very busy schedules lately. From now on, I think it will be best to post every two weeks instead of once a week for a while. Anyway, I have another pumpkin delight for you this October…. Cookies!
These all came out very moist and pumpkin flavored, the way I hoped they would. Please let me know what you think of them in the comments below! Here is a list of the ingredients you will need for this recipe.
1 cup pumpkin puree (not pumpkin pie filling)
1/2 tsp baking powder
1/4 tsp baking soda
2 tbsp flaxseeds (or 2 eggs)
2 1/2 cups oatmeal (divided)
1/4 tsp salt
1 tsp vanilla
1/4 cup applesauce
3/4 cup raisins
1/2 cup almond milk (or other milk of choice)
1 tsp pumpkin pie spice
1/2 cup coconut sugar
Now let me breakdown the recipe for you using pictures step by step.
First, gather all of your supplies listed above. Take out two bowls, one for dry ingredients and one for the wet ingredients.
2. After gathering your ingredients, start by making your oat flour. You will need one cup of oats. Put the oats in your blender or mixer of choice. I really enjoy my magic bullet shown here.
3. After you put your oats in the blender, add in the 1/2 cup of coconut sugar. You can use brown sugar instead if you like. Combine together into a fine powder.
4. In a big bowl add all of your dry ingredients together including the oatmeal and sugar mixture except for the extra 1 1/2 cups of oats you will use later. Your dry ingredients are baking powder, baking soda, flax seeds, salt, pumpkin pie spice.
5, Next combine all of your wet ingredients. I suggest you start with the pumpkin. Then add the following: vanilla, milk, and applesauce. Mix together until nice and smooth.
6. Now combine the dry and wet ingredients together in one bowl. Mix until well combined.
7. Now that everything is nicely combined, it time to add the extras including the extra oats! This creates a nice balance between soft and crunchy when the cookies are baked.
8. Now feel free to add your raisins to make the perfect pumpkin oatmeal cookie. I used about 2/3 to 3/4 cup.
9. Finally, drop about a tbsp of cookie dough on your tray. I suggest lining it with parchment paper so they don’t stick. In total I made two trays of nine cookies. Eighteen total. Bake them in the oven at 350 F. Your cookies should be done in about 20-25 minutes so keep a close eye out for them not to burn!
