Pumpkin Chocolate Chip Gluten Free Vegan Muffins
Hello Everyone! I am sorry it has been so long since I blogged. I had a very busy past two months including adding a new side hustle besides this one. Good news though, I am back on for blogging posts. I have many new ideas to go with this amazing New Year! Happy 2020! A new decade begins….
So I decided I am still in a bit of a pumpkin mood even though Christmas is done. Hence a quick and simple recipe for you today. I will admit that this is partly from a box mix but this mix is naturally gluten free and can be made vegan with a few easy swaps. Also, I tend to enjoy this brand a lot in regards to their box mixes for numerous items including their cake mixes and pizza dough to name a few.

Today, I am using their pumpkin muffin and loaf mix. There is one more note: Though this box mix is gluten free it does use Almond meal as its flour base so it is not Nut Free. Okay, now that that issue has been addressed let me begin our recipe with the supplies you will need.
Supplies for this recipe will be the following:
Simple mills Pumpkin muffin mix
1 cup measuring cup
1 tbsp measuring spoon
2-3 medium bananas
Applesauce
Chocolate chips ( I prefer Enjoy life brand since they are vegan as well as Top 8 allergen friendly) #NotSponsoredbyEnjoylife.
Water or milk of choice
Below is a picture of all the supplies you will need.
The first thing you should do is mash up 2-3 medium bananas until smooth. This helps to create a sweet taste and much added moisture to the premade mix. A little secret here is that the bananas actually replace the two eggs suggested on the Simple mills box. My mom says she loves this particular swap! She tried it the way the box suggested once and it simple does not compare!
2. Next, add two tablespoons of your favorite applesauce! This little gem replaces the oil in the recipe. Good news you can literally swap the applesauce tablespoon for tablespoon for the suggested oil on the box. This also adds some sweetness but also eliminates extra fat. Great for people who want to lower their overall fat intake including saturated or polyunsaturated fats like trans oils.
3. So now it is time to add your one cup of water as per the box instructions. You can also choose to add any milk of your choice at this time of the same amount. Both ways are delicious! I do not feel the need to add milk to this recipe since there is so much flavor already in this mix and the swaps alone.
4. Okay, now you have already mixed all of your wet ingredients together. It is time for the Simple Mills pumpkin muffin mix. We are almost ready to mix everything together.
5. Here is the result after mixing the wet and dry ingredients together! Yum! Now in the next step you can put all of you add-ins of choice in. As stated previously via the title I chose to add chocolate chips.
6. The final add-in! My favorite Enjoy life Chocolate chips. I have about a half cup here but always feel free to add more or less to your liking. Once you finish with your add-ins, put all your muffins in a muffin tin and I highly suggest using liners.
7. Bake at 350 degrees F for 25-30 minutes depending on your oven. Mine take about 27 minutes on average.
Here is the recipe in Full:
Mash 2-3 bananas in a large bowl and blend until smooth.
Add 2 tbsp of applesauce to the mashed bananas
Add 1 cup water or milk of choice to the bowl and mix all wet ingredients together.
Add 1 box of pumpkin muffin mix from Simple mills #Notsponsored
Combine wet and dry ingredients until mixed.
Place in the add-ins of your choice to your bowl. (I love chocolate chips) Another good option is raisins).
Place your muffin mix into muffin tins and bake at 350 degrees F for 25-30 minutes depending on your oven. Mine usually is finished in 27 minutes.
